Can I (admin) decide which person attributes should be displayed from Marketo in OneInsight?

Yes. As an administrator of the OneInsight instance you can control which person fields are shown, the order of the fields and if users can edit these fields. To find out how this is being done, read the article  Define fields that users can see and edit.
